They have what are known as DMX switches, which simply turn on and off the lights. Some dimmer packs have this built into them, but you have to be careful. The thing that fries the motors/ballasts are the SCR's and Chokes in the dimmer packs. See this thread where I explain all about dimmers and their effects on non-filament sources. It is quite a bit of reading though and has some math in it
