Here is a
chart for CMY values. Higher end consoles, like the Hog 3, have gel pickers in them for RGB, RGBA, RGBAW, and CMY lights. The only problem is, every light will be different do to different color temperatures on lamps and different CMY filters used. This chart, for example, is actually meant for incandescent lamps (color temperature 3000-3200k roughly) instead of arc lamps (5500-8500k generally). Also be aware that even gels will produce slightly different colors in different instruments depending on optics and color temperature again.
Your best bet, take time in a dark room, have a bunch of fixtures with gel colors you want to use with CMY in fixtures you will be using side by side with, figure out the values, and write/type them so you have for future use.
